How to make pickled daikon

Pickled daikon

Ingredients:
1 daikon
4 tablespoons sugar
1 tablespoon white vinegar
6 tablespoons fish sauce
1 cup water

Directions:
1. Cut the daikon into thin two inch long pieces and then wash it in salt water.
2. Add 1 cup of water, 4 tablespoons of sugar, 1 tablespoon of white vinegar, and 6 tablespoons of fish sauce into a pot and then boil it for a couple minutes.
3. Set the ingredients aside until all the water is drained from the daikon and the fish sauce is fully cooled down.
4. When the ingredients and finally ready, pour them into a jar and set in the refrigerator. Now, they are ready to eat anytime. Just store them in the refrigerator when you are not eating them.

I know these are someone's favorite so I decided to get the recipe this morning. There is a little special jar waiting for you to take home with you next time you come.

Recipes 15-16

Sour Choy soup
Serves 3-4 people

Ingredients:
1 tomato
Sour choys
Ngo-om
Garlic
½ teaspoon chicken powder
4 cups water
2 shrimps
1 teaspoon Canola oil
Sugar
1 ¼ teaspoon fish sauce
Pepper
Monosodium Glutamate

Directions:
1. Wash and cut the tomato into ten pieces.
2. Wash the sour choys and cut them into strips.
3. Wash the shrimp and peel off the shell. Then, cut them down the middle to remove bad substances and chop the shrimp into a kind of paste.
4. When that is done, add a pinch of sugar, pepper, and ½ teaspoon of fish sauce into the shrimp paste.
5. Wash the Ngo-om and chop it into small bits.
6. Put in the oil and a pinch of garlic into a pot (stove on medium). Then, put in the choys with ½ teaspoon of chicken powder and mix the ingredients around while it is cooking.
7. Next, pour in 4 cups of water into the pot and put a bit of Monosodium Glutamate into the soup.
8. Boil the soup while adding the shrimp mix, tomatoes, and ¼ teaspoon of fish sauce. Continue to boil it for 10 minutes on low and then add a sprinkle of pepper.
9. Finally, pour it into a couple of bowls and put the chopped Ngo-om on top.


Stir-fry chicken wings
Serves 3-4 people

Ingredients:
Chicken
3 garlic cloves
1 teaspoon Canola oil
1 tablespoon fish sauce
1 ½ teaspoons sugar
Monosodium Glutamate
Black soy sauce
½ cup water
Chili powder
Pepper

Directions:
1. First, peel and chop the garlic into tiny pieces.
2. Then, cut the chicken into medium sized pieces and wash it in salt water.
3. Add the oil and the garlic into a wok (stove set on high).
4. Next, put in the chicken, fish sauce, 1 teaspoon of sugar, a pinch of Monosodium Glutamate, a few drops of black soy sauce, and ½ cup of water. Mix it together well.
5. Continue to cook it and add a sprinkle of chili powder, pepper, and ½ teaspoon of sugar.
6. Cook it for about 8 minutes and then it should be ready to serve.

Recipes 13-14

Salad with beef pieces
Serves 4 people

Ingredients:
Lettuce
1cucumber
1 tomato
¼ large onions
1 garlic clove
Beef
Monosodium Glutamate
Pepper
1½ teaspoon Canola oil
Black soy sauce
Dressing

Directions:
1. Wash the cucumber, tomato, and lettuce.
2. Cut the lettuce into strips and cut the cucumber into short strips. Place them together on a plate.
3. Then, cut the tomato into thin half circles and place it on top of the lettuce.
4. Cut the onion into slices and set aside.
5. Peel and chop the garlic clove into tiny pieces.
6. Next, cut the beef into thin short, thin strips and put them into a bowl. When that is done, add a little Monosodium, pepper, and ½ teaspoon of oil into the bowl with the beef.
7. Afterward, add 1 teaspoon of oil, the onions, and a little bit of the garlic into a wok (stove set medium high).
8. Mix around while cooking the onions for a little while and then add it on top of the salad.
9. Add the beef and the rest of the garlic into the wok (stove on high now) and add a little more Monosodium Glutamate and pepper. Keep mixing and cooking it until the beef is done.
10. Finally, put it on top of the salad and add black soy sauce on top of the beef. You can also add dressing to the salad if you want to.


Sardines with onions
Serves 4 people

Ingredients:
1 small can sardines in tomato sauce with chili
1 garlic clove

½ onion
½ green onion
1 teaspoon Canola oil
Pepper

Directions:
1. First, peel and chop the garlic into tiny pieces.
2. Cut the onion into slices and cut the green onion diagonally into pieces.
3. Then, add the Canola oil, garlic, and onions into a pan (medium heat).
4. Cook it for a few seconds and then add the can of sardines into the pan.
5. Keep cooking it until it is done and then pour it onto a plate.
6. Finally, top it with a pinch of pepper.

Recipes 11-12

Chinese spinach with pork bits
Serves 3-4 people

Ingredients:
Chinese spinach or Yu Choy
1 garlic clove
Meat or pork bits
Monosodium Glutamate
Chicken powder
½ teaspoon corn starch
½ cup water
3-4 teaspoons Canola oil
1 teaspoon black soy sauce

Directions:
1. Wash the spinach and then rip the leaves off of the stalks. Keep the leaves and peel the hard outside of the stalks.
2. Peel and chop the garlic into small pieces.
3. Put a little Monosodium Glutamate, a little chicken powder, the corn starch, and the water in a bowl.
4. Mix them together and then cut the pork into small pieces.
5. Add 1-2 teaspoons of Canola oil into a wok (stove set on high) and then add the spinach to cook until it is done. When it is done, put it onto a plate.
6. Next, add 1-2 more teaspoons of oil into the wok and then put in the garlic, pork, black soy sauce, and the water mixture from earlier.
7. Cook it a short while and then add the spinach. Continue to cook it until it is finally done.
8. Pour it onto a plate and then it is ready to serve.


Egg with squash and shrimp
Serves 3-4 people

Ingredients:
1 green squash
Shrimp
1/6 – 1/7 onion
3 eggs
Fish sauce
Chicken powder
Monosodium Glutamate
Pepper

Directions:
1. Peel and cut the squash into long, thin (about 5 cm. long) pieces and then set it aside.
2. Peel and wash the shrimp and then cut it down the middle to remove any bad substances.
3. Cut the shrimp into small pieces.
4. Cut the onion into small pieces.
5. Crack 3 eggs into a bowl and then add a little fish sauce, chicken powder, Monosodium Glutamate, and pepper.
6. Mix very thoroughly until it is completely yellow and has no solid substances.
7. Add 2 teaspoons of oil into the wok (stove on high) and then put in the onions.
8. Mix them around and cook it for a little while before you add the garlic, shrimp, and onions.
9. Stir it around and then continue to cook it. When it is done, add it to the egg.
10. Mix the cooked food in the egg and then add it back into the wok. Cook the mixture until it is done and then pour it onto a plate and it is ready to be served. (The amount cooked may be too much for the wok to hold so it may need to be cooked in two batches.)


The egg recipe is similar to the one with imitation crab meat. Just so you know, the food items that don't have measurements in the ingredients section, I either put it so you are only supposed to add a little bit to the dish or the ingredients that I don't metion any measurements are supposed to be for you to add as much or as little of those ingredients that you want. Most of the time, those ingredients shall be meat or choys.

Recipes 9-10

Celery and pork dish
Serves 5 people

Ingredients:
pork
5 celery stalks
2 teaspoons Canola oil
2 garlic cloves
¼ teaspoon sugar
¼ teaspoon chicken powder
1 teaspoon fish sauce
1 teaspoon soy sauce
pepper

Directions:
1. First, cut the pork into medium sized pieces.
2. Wash the celery well and peel or cut away any hard outer parts and the bottom of the celery. Then, cut the celery into bite size pieces.
3. Next, add the Canola oil, garlic, and meat into a wok (medium heat). Then cook while adding the celery, sugar, chicken powder, fish sauce, and soy sauce.
4. Continue to cook for a few minutes or until it is done.
5. Finally, top with a tiny pinch of pepper.

Chinese Sausage
Serves 3-4 people

Ingredients:
1 Chinese sausage

Directions:
1. Wash the sausage until it is clean.
2a.Next, you can cook it in the rice pot when it still has a little bit of water at the bottom, but the rice has to be relatively done. It cooks in there for about 10 minutes.
2b.The alternative way is to cook it in the toaster broiler until it is done, but it is required that you watch it so it does not get burned or anything.


The Chinese sausage has two different ways to make it. Yesterday, I could not post a recipe because she made Ong choy again, so I had no need to record it again. We mostly ate the leftovers from Sunday.

Recipes 7-8

Stir-fry shrimp with pork
Serves 3-4 people

Ingredients:
½ garlic clove
Pork
Shrimp
1 tablespoon Canola oil
½ teaspoon black soy sauce
Monosodium Glutamate
1 teaspoon sugar
1 ½ tablespoon fish sauce
5-6 teaspoons water

Directions:
1. First, peel and chop the garlic into small pieces.
2. Next, cut the pork into thin slices.
3. Rinse and peel the shells off of the shrimps.
4. Add 1 tablespoon of oil and the garlic to the pan (stove on high) and mix it around for a few seconds.
5. When that is done, add the pork and shrimps into the pan to cook.
6. While it is cooking, add ½ teaspoon of black soy sauce, a small pinch of monosodium glutamate, the sugar, fish sauce, and the water.
7. Continue to stir and cook the meat and then pour the sauce or liquid from it into a plate.
8. Keep cooking the meat until it is done, and pour it out onto a plate. Now, it is ready to serve.


White yam and shrimp soup
Serves 3-4 people

Ingredients:
2 large shrimps
1 white yam
4 cups water
1 1/2 tablespoons fish sauce
Monosodium Glutamate
Pepper
Ngo-om (type of herb)

Directions:
1. Wash and peel the shells off the shrimps. Cut it down the middle when you are done to remove bad shrimp substances.
2. Then, chop the shrimp with a little bit of garlic until they are broken down into small pieces.
3. Wash and peel the white yam’s skin.
4. Next, mash up the white yam into a paste or scrape it with a spoon into a paste.
5. Boil 3 cups water and then add the yam paste into the water
6. Lower the stove to medium while you stir in the fish sauce, a pinch of Monosodium Glutamate, a sprinkle of pepper, and the shrimp mix.
7. Stir the soup and see if it is thick. If it is, add 1/2 – 1 cup of water to the soup.
8. Finally, continue to cook it until it is done and then pour it into a bowl. Add some pepper and Ngo-om to it and it is ready to serve.

Recipes 5-6

Beef and Chinese Broccoli
Serves 3-4 people

Ingredients:
Chinese Broccoli
Beef
1 garlic clove
Small ginger
½ teaspoon white wine
Monosodium Glutamate
Corn starch
Pepper
7 preserved black beans
1 teaspoon oyster sauce
½ teaspoon chicken powder
1-2 teaspoons water
2 ¼ teaspoon Canola oil

Directions:
1. First, peel and chop the garlic into small pieces.
2. Then, cut the beef into thin slices and put it into a bowl.
3. Add a small pinch of Monosodium Glutamate, corn starch, pepper, and ¼ teaspoon Canola oil into the beef.
4. Next, cut a small piece of ginger and chop it into tiny pieces. After doing that, add a ½ teaspoon of white wine to the ginger and mix together in a small plate.
5. Wash the broccoli and then rip the leaves from the stems. When you are done doing that, peel the hard outside part of the stem and keep the inside part.
6. When you are done, cut the broccoli into smaller bite-size pieces.
7. Wash the preserved black beans and chop them into tiny pieces. Set them aside in a little plate.
8. Then, take the ginger pieces out of the white wine and throw them away leaving the flavors in it.
9. Next, add 1 teaspoon of Canola oil to a wok (stove on high) and then add the broccoli to cook for 1 minute with the lid on. Mix the broccoli for a few seconds before and during cooking.
10. When it is done, put it onto a plate and add 1 teaspoon more of oil into the wok. Then add the beef mixture.
11. While it is cooking, add in the oyster sauce, chicken powder, corn starch, and water.
12. Finally, cook it until it is done and pour it onto a plate. Add a little pepper before serving.

Large fried egg with onions

Serves 3-4 people

Ingredients:
3 eggs
1 roll of imitation crab meat (roll the size of hot dog)
1/3 onion
1 clove garlic
1 teaspoons Canola oil
Pepper
Fish sauce
Monosodium Glutamate
Chicken powder

Directions:
1. Cut the imitation crab meat into thin 2 cm. slices.
2. Peel and chop 1 clove of garlic into tiny pieces.
3. Crack the eggs into a bowl and add a tiny pinch of pepper, fish sauce, Monosodium Glutamate, and chicken powder. Stir them together well.
4. Then, pour the oil into a wok (the stove on high) and add the onions and crab meat to cook for a few seconds.
5. After a little bit, add the eggs to cook for a little while and soon it shall be ready to serve.
6. When it is done, move it onto a plate, and it is ready to serve.

Recipes 3-4

Ong Choy
Serves 3-4 people

Ingredients:
Ong Choy
1 garlic clove

1-2 teaspoons Canola oil

Directions:
1. First, wash the choys thoroughly and separate the green leaves from the hard, old stems
2. Next, put the stove on high and add the oil and garlic into a wok that is set on the stove.
3. Then, add the Ong Choy and cook for a few minutes (2-3 min).
4. Put it all onto a plate and it is ready to be served.


Orange chicken with tomato sauce
Serves 3-4 people

Ingredients:
1/2 onion
3 teaspoons frozen tomato sauce
3 teaspoons water
3 teaspoons sugar
3 teaspoons soy sauce
3 teaspoons vinegar
1 tiny pinch of Monosodium glutamate
10 pieces frozen orange chicken
1 teaspoon Canola oil

Directions:
1. First, cut the half onion into multiple slices.
2. Then, mix together the tomato sauce, water, sugar, soy sauce, vinegar, and Monosodium glutamate.
3. Next, microwave the frozen orange chicken for three minutes and put it into the toaster broiler for a few minutes.
4. Put the stove on high and pour in the oil and onions in a pan.
5. Cook for a couple of minutes and add the mixture from before and the orange chicken into the pan.
6. Cook it for 40 seconds and it is ready to be served once it is put onto a plate.

Recipes 1-2

Water Egg Serves
3-4 people

Ingredients:
3 eggs
10 mini dried shrimp
1 teaspoon salt
½ teaspoon chicken powder
½ teaspoon monosodium glutamate
1 teaspoon Canola oil
½ cup water
1 teaspoon soy sauce (optional)

Directions:
1. First, wash the mini shrimps.
2. Next, crack the 3 eggs into an oval plate
3. Afterward, add the mini shrimps, salt, chicken powder, monosodium glutamate, Canola oil, and water into the oval plate with the eggs
4. Mix thoroughly
5. Put the oval plate with the mixture in it into a pan with the lid on the stove for 10 minutes on low heating
6. When it is done, spread a teaspoon of soy sauce on top and then it is ready (optional)

Mushroom and Corn Dish
Serves 3-4 people

Ingredients:
4 dried Shiitake mushrooms
1 can young corn
1 dehydrated fungus (optional)
8 large shrimps
2 cloves of garlic
1 tablespoon Premium oyster flavored sauce
1 teaspoon chicken powder
1 cup water
1¼ teaspoon corn starch
4¼ teaspoon Canola oil
1 tablespoon soy sauce
¼ teaspoon pepper
½ teaspoon sesame oil

Directions:
1.Soak mushrooms and fungus up to 5 hours or until soften
2. Open can of corn and rinse the corn
3. Cut mushrooms, corn, and fungus into halves
4. Rinse and peel shrimps
5. Set a pan on the stove set on low
6. Add 2 teaspoons of Canola oil, 4 mushrooms, fungus, and ¾ cup of water into the pan
7. Cook in pan for 5 minutes and then set aside in a container
8. Next, put the 8 shrimps, ¼ teaspoon of corn starch, ¼ teaspoon of Canola oil together in a bowl
9. Put 1 teaspoon of corn starch, ¼ cup of water, 1 tablespoon of soy sauce, and ½ teaspoon of chicken powder into a separate bowl
10. Then, add 2 teaspoons of Canola oil into the pan
11. Add the corn, shrimp mixture, and garlic into the pan
12. Then, add the mixture of the mushrooms and fungus
13. Add the remaining mixture into the pan along with the pepper and sesame oil
14. Cook for 3 minutes
15. Pour it onto a serving plate and it is ready


These are the first recipes that I have recorded, but there shall be many more to come. Eventually, I will begin posting how to the lunch dishes and other dishes for holidays (i.e. banh chung) but for now, I shall stick to the dinner dishes.
